I would recommend this exactly as well, if not going the full PPF route which is pretty expensive. If I could recommend a brand for ceramic coating, CarPro UK 3.0 is showing no signs of degrading after 2+ years on my current (soon to be previous) vehicle.

EDIT: yes, use ceramic coating ONLY AFTER the PPF is installed. There is also PPF specific coatings that can be used in combination with regular coatings for just the painted surfaces
