OK - now I get it! The valve stem is a tube that goes through from the outer wheel mesh to the middle of the rim before it enters the rim barrel. It seems like a crazy design to me.

All it would take is a piece of gravel getting inside the rim and sliding along until it gets caught between the caliper and the valve stem and you'd lose all your air in a hurry. That could happen at low speed on a driveway just as easily as driving fast somewhere.
