COVID is running rampant I was exposed so I quarantined. Just got my PcR test back negative. Looks like the booster protected the wife and I. We were with my son watching movies and having dinner Friday night. He tested positive Sunday AM. Home all last week and Cooked this weekend

Asian-inspired stir fry. An old staple in my repertoire that hasn’t seen much play lately.

Fresh garlic and ginger fried in oil with bok choy, carrot, spring onions and water chestnuts. Flavored with tamari and sesame oil. Served on rice. Really good.

Gf DF vegan.

1 cup plain unsweetened almond milk
1/2 cup plain full fat Greek yogurt
1 scoop vanilla protein powder
1 frozen banana
1/8 tsp ground cinnamon

For us, last night was stuffed peppers, cajun style. Cajun mirepoix (onion, celery, green pepper), zucchini, crushed tomatoes, leftover rice. 30 minutes @ 350 degrees. I used a little too much cajun spice, so we threw a dollop of sour cream on our plates and used that to cut the heat.
