For me, I went down the rabbit hole too far, and found out about pesticides and how they are linked to cancers, allergies and even developmental effects in children and people (think - Autism, asthma and the like)
So now I’m trying to do organic vegan - it’s expensive! But buying just the raw foods and making it myself is a bit of a challenge, but this is what life was for most people in the world, and its healthier. I like knowing what’s going in my body |

Was told by my doctor to consider a "more" plant-based diet. So far it really isn't that bad or hard as some people say. I prefer the Beyond meat over the Impossible meat though.

Plant based, vegetarian, call it what you want has tremendously good culinary options. We generally explore Indian and middle eastern cuisines and have really enjoyed the journey.

people have to be so extreme when choosing what to eat nowdays. just another identity to feel belonged too. sometimes I eat plants, sometimes I eat meat.
people are too concerned with what they are eating nowadays and further propagated by BS science and placebo effects. I think both extremes it extremely hard to get everything, as such you should eat both. |

Never been vegan but I have played with vegetarianism as a way to keep my weight down. However at one point I got a nasty case of arrhythmia which was traced to an iron deficiency. I concluded that I probably was not as careful about covering gaps in my diet so I mixed some animal proteins in.
The result was the 3,2,1,Zero diet which I've done for years. Basically it's 3 parts veggies 2 parts simple carbs 1 part animal protien Zero sugar. (although that's really not possible I try to never exceed 11 g) Now that I'm old and don't care as much I follow the diet but drink beer on Sundays. Not much of a weight shift occurred as long as I keep the beer drinking to one day a week.

We use extra firm. You can also use a tofu press to firm it up even more, if need be. For years I ran screaming into the night every time Wifey tried to get me to eat tofu. But then she came up with some decent recipes where the tofu is extra firm and sautéed until it is nicely browned on the outside. Then I started to enjoy it more. It was more of a texture thing. I hate mushy tofu, but I like it if it is drier and browned on the outside.

Press out as much water as you can. Then cube it or make planks. Then brown it in a pan with oil or butter. We do black pepper, or General Tso's, or panko crusted. Plenty of good recipes out there, but the key is to get as much water out as possible and then brown it.
