I have not had this problem. The rev matching does take some getting used to for sure. Maybe try to turning that off and see what happens for a bunch of miles.

2 times that rev match did not work for me was when I was lazily driving and had the clutch pedal down for a few seconds in neutral before shifting into 2nd and the engine did not respond. Put it back in neutral let off clutch pedal and reapplied and worked normally. I wonder if there is some sort timer/cancel function if the clutch pedal is pressed down too long before shifting.

On my car if I do not downshift almost immediately, the rev match does not hold the revs, it is more like a trottle blip.

Also, applying your own amount of throttle while out of gear will generally override it.
