On some YouTube videos they are adjusting the burbles and exhaust sound from the phone/software. Is there an easy way to do that, or do the DME has to be unlocked?

DME would need to be unlocked since they are probably using Bootmod3 or MHD to tune. If you did catless (or even high flow catted) downpipes you will also increase the burble loudness and duration without tuning.
