First cook in the new house. One of my favorite Indian recipes at the moment. If you like Indian food, have an adventurous palate and are looking for a challenge, you need to make this. Mind altering flavors and a fun cooking process with whole spices and ingredients completely unknown in the Western European pantry.

Use this recipe, if for no other reason than the music is cool.

I have been hooked on watching butchering videos from these guys on youtube that make videos about how to butcher a whole cow, pig, deer etc. Is it messed up I get turned on by the sight and sound of their ridiculously sharp knife slicing through fat caps???

Slow cooked carnitas! In the InstantPot all ready to simmer till tonight. I'll pull them out just before we eat and flash fry them in a cast iron skillet to get them browned and a little crispy on the outside.
