I've driven both, and they are both phenomenal, to the point that I think the cars above their bracket aren't really anymore enjoyable to drive, if they're even as good as.
To me, the 570S has the most perfect feel of controls of any car I've driven. And the power/acceleration is clearly superior to a GT3 RS. That said, the RS is brilliant in it's own right, with throttle response and a sound to die for. In it's favor, the RS will be a better investment in the long run, and is closer to the last of a dying breed than the 570. Personally, if you've had your fun with the McLaren, I'd make the jump. Exclusive, no. Showy, yes. If anything the RS is more "exclusive" considering how hard it is to get an allocation and how they're holding value.

Back to answering the actual question...depends on your use-case, but I would go RS for the following reasons:
1// NAs are a dying breed. If you're going to hold onto this car for a while, you'll want the RS. The McLaren will be replaceable at any point in time. 2// McLaren reliability is unproven to say the least. Porsche GT cars are relatively solid. 3// The RS is a bit easier to live-with, if that matters to you at all. If this is your 3rd or 4th car in the stable than probably not an issue but if I only had two cars I would want the RS as my weekend toy vs. the 570s. 4// Once you have the money for toys like this, depreciation really shouldn't be a main factor but either way the 570s simply won't hold value like the RS, especially with the 600LT out now.

Which gen GT3 RS? But yes, it’s pretty much a no brainer there man. Whether it’s .1 997 or .2 997 or the 16 991 vs the 19 .2, the answer is always YES! Porsche

I'm going to defend him for posting on a BMW forum. You get many more enthusiasts and relatively objective opinions here than if you go to Rennlist or whatever the heck the McLaren forum is.
Rennlist will tell you "buy the RS! It'll develop a patina made of gold and platinum and be the last NA car ever produced in the history of cars!" McLaren Forum will tell you "The 570s is more speshul. The doors go up like dis. Porsche has poor people doors. What's an NA engine?"
