Looking through this thread, some of you guys need to up your steak game:
Eye of rib, medium rare, reverse seared. Edge to edge perfection. Wife is Japanese, rice is always on the menu. |

Reverse seared on a Kamado Joe.
Indirect at 250 with a little hickory wood until the steak hits 120. Pull it off, remove the heat deflectors out of the kamado, drop the grates down, crank the vents wide open and let it get to 650-700. Sear 90 seconds each side, giving it a 90 degree twist at around 45 seconds. Pull it off, top with garlic butter while it rests for 5 minutes. Gets you a perfect steak every time. |

I rarely have steak (no pun intended) when I do I prefer thinner slices and well done.
