My gripe isn't the price of eggs per se. It's the fact that people who normally wouldn't touch egg whites are now snapping them up because they're cheaper than eggs. I have egg whites for breakfast because I need to keep my cholesterol way low. I can't find my usual egg whites anywhere now. When the price of whole eggs comes back down, maybe I can go back to having my scrambled egg whites again.

Egg Beaters aren't bad. Wifey has been eating them for years and was always trying to get me to try them. One day I made an omelet with them and added cheese, ham, and chives. They were actually pretty good that way. So I've been having them scrambled with those same ingredients. Quick to make and healthier than whole eggs. I still have whole eggs every now and then, though.

There's really no point having egg whites if you're gonna put cheese in them, you're replacing one cholesterol for another, may as well just eat the yolk.

Nah. The non-fat mozzarella I use has 5mg in 1/4 cup, and I don't use even that much. One large egg has 186mg, almost all in the yolk. Big difference.
