Dal tadka

A culinary trip to India!

I haven't cooked Indian food lately. This is dal (lentils) with a tadka (fried veggies and spices) over cumin rice. Super good.

Dal
3/4 cup of equal parts mixed dal (whichever you like or have on hand)
1/2 tsp turmeric powder
salt
Wash dal two times, then boil for 5 minutes with 2 1/4 cups water, salt and turmeric, mix well, then turn off heat and cover.

Tadka
3T grapeseed oil
3T ghee
1T cumin seeds
1/4t hing (asafoetida)
1/4c onions
1 clove chopped garlic
1 inch chopped ginger
2 chopped green chiles
2 dried red chiles
1 large chopped roma tomato
1/2t coriander power
small handful curry leaves
1T kasuri methi leaves
1/4t brown mustard seeds
1/2c chopped fresh coriander
2 small chopped eggplant
salt to taste

Heat oil and ghee, add seeds and fry. Add veggies and fry. Add coriander powder and fry. Add remaining ingredients and 3/4c water, bring to boil then simmer for 15 minutes.

Cumin rice
1/2c Basmati rice
1/2t turmeric powder
1T cumin seeds
1/4t salt

Wash rice twice then boil with 1c water, turmeric and salt. Turn off heat, cover and let stand for 45 minutes.

Reheat dal and add water to thin to a porridge consistency. Plate rice first, then dal, then tadka.

Yup, my wife takes veggies from the garden over often, sometimes a chocolate zucchini bread (to die for) so it goes back and forth. They are great neighbours.

1. Making rice and steaming beans.
2. Stewing tomatoes.
3. Slicing the breast.
4. With shredded parmesan.

Friday is fish day in my family so it's Atlantic cod cooked in a Ninja air fryer with best potatoes mashed and garden peas (not mushy peas) together with a dab of seafood sauce.
