How often did we have to change the spark plugs ?
I need recommendations also for brand and size.

I'd say 100k. Maybe sooner if you drive hard. Heck, many cars never get their plugs changed.

BMW told me 50K to change but I thought they were blowing smoke but when my mechanic took them out, they were pretty toast. I opted out for the stock M5 ones

Toast? Old ones will obviously come out dirty, but all that matters is the gap size on the electrode. And doesn't bmw use platinum or iridium plugs? They last a long time.

Well two of them were rattling when you shake it. He recommended to replace them since I have a tune

They say when running a tune , they should be changed every 15-20k miles to prevent misfires

The only way a plug would rattle is if the ceramic was broken. Then you'd have a lot bigger issues. I think you got taken or shown something else.

Should we really follow the time guidelines or stick to miles? 2014 with 15k is technically almost due for spark plugs but seems foolish.

Yes. I would change them out every 2-3 years. I just bought my car few months back so I wanted everything under my schedule

To be honest if your going to pull them out at 50k to check them and doing the labor you mine as well change them as there not very expensive . If your paying then definitely change doesn’t make sense to do it twice eventually.

I brought in my 2014 335i for an oil change and also to replace brake pads and they said that I should replace my spark plugs. It popped up when they scanned my key. My car is almost 6 years old and 53k kms.

Maybe it's cuz of the 6 years. Low mileage sure but maybe they spent a lot of time at idle? Lol
